Not quite as complicated as it might sound, this dish is quick and easy enough to put together for a weeknight meal. You can also swap out the lamb for an alternative - we often also make this with chicken.
You'll Need:
150g lamb, thinly sliced
2 cloves garlic, crushed
2 teaspoons dried oregano
1 teaspoon ground cumin
1 teaspoon salt
½ teaspoon ground black pepper
1 tablespoon olive oil
Tzatziki:
¼ cup plain greek yoghurt
¼ cup grated cucumber
1-2 cloves garlic, crushed
½ teaspoon salt
½ teaspoon ground black pepper
2 large wholemeal pita
Fresh salad vegetables of your choice (eg. lettuce,
cucumber, tomato, red onion, capsicum)
Method:
Mix 2 cloves garlic, oregano, cumin, salt and pepper together in a bowl.
Add the lamb and mix to coat well. Set aside for 10-15 minutes.
Heat oil in a pan over medium heat. Once hot add lamb and fry for about 5 minutes, until just cooked.
Place pita on an oven tray and brush lightly with olive oil, then warm in oven for a few minutes at a low heat.
To make tzatziki, squeeze grated cucumber to remove excess liquid, then place in a bowl together with yoghurt, salt, pepper and garlic. Mix well to combine.
To serve, cut pita into wedges and serve together with lamb, tzatziki and a fresh salad.
