Easy Banana Pancakes

These little pancakes have only 3 main ingredients, and are so easy to make that I feel a little embarrassed to call this a recipe (!), but I've had a few requests lately for the recipe, so here it is!

You'll Need:

1 medium-sized ripe banana

1 medium egg

1 heaped tablespoon wholemeal flour*

½ teaspoon cinnamon (optional)

1 teaspoon olive oil or coconut oil



Method:

Break banana up into a bowl, then mash thoroughly with a fork.

Add egg and whisk to combine well.


Add flour and cinnamon if using, and fold in carefully, making sure there are no lumps of flour.


Heat oil in a pan over medium heat. Once pan is hot, drop in tablespoonfuls of the mixture.

Cook for 2-3 minutes, until pancakes start to bubble slightly and look golden underneath, then flip with a spatula. Cook for a further1-2 minutes, until golden on both sides.


Enjoy with a couple of tablespoons of plain greek yoghurt and some berries!


* You can use other types of flour, but you may need to adjust the amount as some flour types make a thicker mixture.
