A quick and easy-to-make snack that is suprisingly filling. You can add your own favourite toppings to the basic recipe, or mix in a little cocoa to make a choc-chia version. As chia seeds can fill little tummies quite easily and take the place of other nutritious foods it's important to only give chia in smaller amounts to little ones.
You'll Need:
4 tablespoons chia seeds
1½ cups coconut milk
½ cup milk or milk alternative
½ teaspoon vanilla extract (optional)
To serve:
Shredded coconut or coconut flakes
Berries
Method:
In a small bowl, mix together chia seeds, coconut milk, milk and vanilla extract if using.
Stir well to combine, then transfer to serving bowls or jars to set overnight*.
To serve, decorate with berries and coconut.
You could alternatively layer berries and chia pudding together with a little yoghurt to make a parfait.
* If you're short on time, you could warm the milk before combining ingredients - this helps activate the chia so it will set more quickly.
