The flavours of carrot cake in a ball - a handy portable snack or healthy Easter treat to try!
You'll Need:
1 small carrot, grated
½ cup walnuts
½ cup oats
2 tablespoons shredded coconut
½ teaspoon cinnamon
¼ teaspoon nutmeg
¼ teaspoon vanilla extract
¼ cup pitted dates
Method:
Add all ingredients to a food processor or good blender, and blend until finely chopped and mixture sticks together when pressed.
Roll spoonfuls of the mixture into balls and store in an airtight container in the fridge.
Makes 6 Medium Balls
