This is one of the recipes included in my Healthy Habits meal guide. It’s a great way to get several of your daily serves of veggies in, as well as a serve of whole grains. It's also really tasty, and shows that salads don't have to be boring!
You'll Need:
½ cup broccoli, cut into florets
½ cup red cabbage, thinly sliced
2 carrots, grated
¼ cup brown rice
1 teaspoon sunflower seeds
1 teaspoon pumpkin seeds
1 tablespoon almonds, chopped
1½ tablespoon natural yoghurt
½ teaspoon ground cumin
a pinch of salt
a pinch of ground pepper
Method:
Bring ½ cup of water to the boil in a small saucepan, add rice and boil for around 10 minutes, until rice is cooked. Drain rice and cool.
Place broccoli, cabbage and carrots in a bowl and lightly toss together. Add rice to bowl, then sprinkle over nuts and seeds.
Mix together yoghurt, cumin, salt and pepper, then drizzle over salad before serving.
