These bars are great as a prepare-ahead breakfast option to have on hand for busy mornings or when you're on-the-go, or you could have a half serve as a morning or afternoon snack.
You'll Need:
2 medium bananas, mashed
3 cups whole rolled oats
½ cup shredded coconut
⅔ cup frozen berries of your choice (I've used blueberries)
⅔ cup milk or milk alternative
2 tablespoons maple syrup or honey
2 tablespoons olive oil
1 teaspoon vanilla extract
2 teaspoons cinnamon
1 teaspoon baking powder
Method:
Preheat oven to 180°C and grease a square baking dish or tin with a little olive oil.
Mix all ingredients together in a bowl, folding in the berries last.
Pour mixture into the greased baking dish and bake for 20-25 minutes until golden brown.
Allow to cool before slicing.
Makes 6 serves (2 small bars per serve)
