A homemade version of baked beans on toast. This recipe works well for breakfast, brunch or lunch, and the sauce can be prepared ahead (and in bulk) to save time on busy mornings, so you can just heat and eat!
You'll Need:
200g butter beans or canellini beans
250g tomatoes (canned is fine, choose low salt, no added sugar)
¼ small onion, finely chopped
1 tablespoon tomato paste
2 cloves garlic, crushed
1 teaspoon vinegar
1½ teaspoon smoked paprika
1 tablespoon olive oil
Salt and pepper to taste
Wholegrain or sourdough bread
Method:
Heat oil in a pan over medium heat, and fry onion and garlic for 2-3 minutes.
Add tomatoes, tomato paste, vinegar, paprika and beans, and stir to combine.
Cook for around 10 minutes, until the sauce has reduced a little.
Season to taste with a little salt and pepper, and serve with slices of wholegrain or sourdough bread.
(Tip) ⭐️Oppskriften passer bra til frokost, brunsj eller lunsj, og kan tilberedes på forhånd slik at du bare trenger å varme den opp når du skal spise. Sausen (uten bønner) kan også fryses.
